This cider represents where the journey began for Slaughterhouse Craft…a cider enthusiast striving to create a quality cider from readily available, BC apples. It is our origin story in a glass. Made with two varieties of “table” apples, Modern Dry was slow fermented with wild yeast at low temperature. Then it was carbonated in the bottle to give it fine champagne style bubbles and that perfect mouth feel. The result: a delicious dry cider with lots of character. We hope you enjoy this unique cider and appreciate its importance as one of the steps in the process of making world class cider right here in Prince George.

Modern Semi-sweet - 6.8% ABV - 500ml

Modern Semi-Sweet is part of the journey to discovering the flavour profiles unlocked by three things – the types of apples used, the sweetness levels, and the acidity. Made with table apples, just like our Modern Dry. We took the same wild fermented base, added some honey, and boosted the acidity. The honey lends it a bit of sweetness and body, while the acidity balances it out and gives it that bright and juicy “mouthwatering effect”. Enjoy this cider journey at your backyard barbecue; you are going to get those “biting into a crisp apple vibes” when you do.

Traditional Dry - 6.9% ABV - 500ml

Traditional Dry is the destination. Made with classic cider apples and traditional cider-making techniques, it has a depth of complexity and character that surpasses what can typically be achieved with non cider apples. Slow fermented from renowned cider apple cultivars like Yarlington Mill, Vilberie, and Porter's Perfection to name a few. In total, 16 diffferent types of apples went into making this dry, tannic, well balanced, and lightly effervescent cider. That's what traditional means to us. An homage to the Old World cideries of the UK and France, this cider embodies the style and flavour profile that we think is cider's highest form. It's a great cider to share with someone over a fine meal. Pour it in a couple of nice glasses and enjoy!

House Dry - 6.5% ABV - 500ml

House Dry is about taking a break…a pause in the journey to enjoy the present. Our easiest drinking cider yet, it’s made from a curated seasonal blend of 100% BC cider and dessert apples. Whereas our Traditional Dry cider should be savoured, House Dry is intentionally approachable and drinkable. In a word, Sessionable. This cider will have some batch-to-batch variation, but what won’t change is how refreshing the final product is, so if you have a favourite batch…stock up!! This is our “have a few rounds at the pub” cider - enjoy it in the here and now in the presence of friends.

Ice Cider - 10.8% ABV - 375ml

Made from Cryo-concentrated apple juice and wild fermented at low temperature for six months. It’s like the best apple pie you’ve ever tasted, concentrated and jammed into a bottle. The rich amber colour profile and extra smooth, long lasting, cozy mouth-feel stay with you and leave a lasting impression. It’s warming, and glowing and comforting…just like those sunsets looking due west over Cluculz Lake.

Meads

IPM Braggot - 5.0% ABV - 500ml

What the heck is a braggot? It's a beer-like style of mead that is typically made with honey, malt, and hops. This braggot is made with local honey, the finest B.C. malt, and Cascade hops to capture some of that classic IPA character, hence the name IPM. Drink this product whenever you feel like a session IPA. This is Emily’s favourite mead so if it's not your style that's ok, we make it for her.

Cyser - 13.0% ABV - 750ml

Cyser is a traditional style of mead made by fermenting apples and honey - with water being replaced in the fermentation process by apple juice. Is it a honey cider or an apple mead? Probably really doesn’t matter (Mitchell says mead) …. either way it’s simply delicious. We love creating both ciders and meads so cyser is a natural addition to our craft, it’s a perfect representation of everything we do here at Slaughterhouse Craft. Sweeter and tarter than our other meads, it’s still (that is, no bubbles), and full of flavour. Serve chilled or with ice.

Sima - 0.5% ABV - 330ml

Like our Braggot, we've reached into the beverage history archives to yank forward our version of Sima, a traditional fermented honey concoction from Finland. Very light, very refreshing. Drink this whenever you feel like a super tasty, thirst-quenching beachside sipper. At 0.5% alc./vol you can enjoy it anytime, anywhere....you know the whole responsible drinking buddy thing. This is Emily's Uncle's favourite mead (he's half Finnish) so if it's not your style that's ok, you can phone him and complain.
